  1. Pat the bombil fillets dry; they are soft and gelatinous, so handle them gently and keep them whole where you can.

  2. Rub the fillets with the red chili powder, kashmiri chili powder, turmeric, ginger garlic paste, lemon juice and salt, and let them sit 15 minutes.

  3. Spread the semolina on a plate and press each fillet into it, coating both sides in a thin, even crust; the crust is what holds a bombil together in the pan.

  4. Heat the oil in a wide, flat pan over medium-high heat until shimmering.

  5. Shallow fry the fillets 3 minutes a side, turning once with a wide spatula, until the crust is golden and crisp and the flesh is opaque through.

  6. Serve hot and crisp, straight from the pan, with a wedge of lemon and dal-rice.
