How to cook it

Blend the dried chilies and garlic into a paste.

Parboil the diced potato until just tender, about 5 minutes, then drain.

Heat 1 tbsp oil in a wok and fry the cubed tofu until golden, then set aside.

Add the remaining oil and fry the chili-garlic paste until fragrant, about 1 minute.

Push the paste aside, crack in the eggs, and scramble briefly.

Add the noodles, potato, chopped tomato, tomato sauce, dark soy sauce, and light soy sauce and toss over high heat until the noodles are evenly coated, about 3 minutes.

Fold in the bean sprouts and fried tofu, toss 1 minute more, and serve with lime wedges.
