  1. Soak the wood ear mushrooms until softened, then slice thin.

  2. Julienne the ginger by the handful.

  3. Heat the oil in a wok and fry the pork until nearly cooked through, about 3 minutes.

  4. Add the ginger and onion and stir-fry 2 minutes.

  5. Add the wood ear mushrooms, yellow bean sauce, light soy sauce and fish sauce, and toss until the pork is cooked through.

  6. Fold in the scallions at the end and serve hot alongside rice, the dish for a cold or a hangover.
