How to cook it

  1. Knead the atta with 1/4 tsp of the salt and about 1 cup water into a soft dough, cover it and let it rest 15 minutes.

  2. Peel and grate the mooli, then squeeze it hard in your fists, a handful at a time, to press out the water. Mooli that is not squeezed leaks while you roll and tears the paratha.

  3. Mix the squeezed mooli with the finely chopped green chili, ginger, cilantro, ajwain, red chili powder and amchur. Add the rest of the salt only now, just before you stuff, because salt pulls more water out of the radish.

  4. Roll a ball of dough into a 5 inch round, put 2 tbsp of filling in the middle, gather the edges over it, pinch them shut and roll it out gently on a floured board to about 7 inches across.

  5. Cook it on a hot tawa for 1 minute, flip it, smear the top with ghee, flip again and press the edges until both sides are golden brown and crisp in spots, about 4 minutes in all. Repeat with the rest.

  6. Eat them hot off the tawa with a lump of white butter, a bowl of dahi or a little pickle.

When to cook it
