  1. Halve the bitter melon, scoop out the seeds and pith, and slice thinly.

  2. Salt the slices lightly and let sit 10 minutes, then rinse and pat dry to soften some of the bitterness.

  3. Beat the eggs with the fish sauce and black pepper.
