How to cook it

Pressure cook the mutton with the ginger garlic paste, red chili powder, turmeric, coriander powder, crushed peppercorns, fennel seeds, salt and the water for 25 minutes, until tender but not falling apart.

Heat the oil in a wide, heavy pan, pop the mustard seeds, then add the dried red chilies and half the curry leaves and let them sizzle a few seconds.

Add the sliced onion and fry until deep golden, about 10 minutes, then add the chopped tomato and cook 5 minutes until it softens.

Tip in the cooked mutton along with the masala still clinging to it, and turn the heat up. Stir-fry 15 to 18 minutes, scraping the pan often, until the liquid dries off completely and the mutton is dark and coated in a dry, glossy masala.

Finish with the remaining curry leaves, slit green chilies and coriander leaves, and serve hot.
