  1. Combine the pork, water, onion, and peppercorns in a pot, bring to a boil, and skim any foam.

  2. Cover and simmer until the pork is tender, about 45 minutes.

  3. Add the potato, saba banana, and corn, and simmer until the potato is tender, about 15 minutes.

  4. Stir in the cabbage and bok choy and cook just until wilted, about 3 minutes.

  5. Season with the fish sauce and serve hot with rice and a saucer of patis and calamansi.
