How to cook it

  1. Melt 2 tbsp of the butter in a skillet over medium-low heat, add the sliced onions, and cook, stirring occasionally, until deeply caramelized, about 25 minutes, then remove.

  2. Form the beef into 4 oval patties sized to the bread and season with salt and pepper.

  3. Cook the patties in the same skillet over medium-high heat until well browned, about 3 minutes per side, then remove.

  4. Butter one side of each bread slice. Build each sandwich with the bread butter-side out, a swiss slice, a patty, a pile of caramelized onion, another swiss slice, and the second bread slice, butter-side out.

  5. Griddle the sandwiches over medium heat until the bread is golden and the cheese melts, about 3 minutes per side.

  6. Cut in half and serve hot.
