How to cook it

  1. Rinse the rice and combine with the water in a heavy pot; bring to a boil, then simmer 35 minutes, stirring occasionally, until thick and creamy.

  2. Toss the pork with the soy sauce, cornstarch and ginger and set aside to marinate while the congee cooks.

  3. Peel the century eggs and cut into small wedges.

  4. Stir the marinated pork into the simmering congee and cook 5 minutes, until just cooked through.

  5. Fold in the century egg wedges and warm through for 1 minute.

  6. Season with the white pepper, drizzle with the sesame oil, scatter with scallions and serve hot.
