How to cook it

  1. Simmer the beef chuck in 8 cups of water with the bay leaf for 1 hour, then lift out, shred, and reserve the broth.

  2. Rinse the barley and simmer it in the broth 25 minutes until tender.

  3. Saute the diced onion and carrot in the oil 5 minutes, then add to the pot with the chunked potatoes.

  4. Simmer 15 minutes until the potatoes are tender.

  5. Stir in the diced pickles and the beef and season with salt and pepper.

  6. Discard the bay leaf and serve hot topped with sour cream and dill.
