  1. Peel and cube the chayote.

  2. Blend the shallots and garlic into a paste.

  3. Warm a splash of the coconut milk in a pot and fry the paste with the salam leaves and galangal until fragrant, about 3 minutes.

  4. Add the chayote, dried shrimp, and water, and simmer until the chayote is nearly tender, about 10 minutes.

  5. Pour in the remaining coconut milk and salt and simmer gently, uncovered, until fully tender, about 5 minutes.

  6. Serve hot alongside rice or lontong.
