How to cook it

  1. Heat the olive oil in a large skillet over medium and cook the onion and bell peppers until soft, about 8 minutes.

  2. Add the garlic, cumin, paprika, and cayenne and cook until fragrant, 1 minute.

  3. Pour in the crushed tomatoes, season with salt, and simmer until thickened, about 10 minutes.

  4. Make six wells in the sauce and crack an egg into each.

  5. Cover and cook until the whites are set but the yolks still jiggle, 6 to 8 minutes.

  6. Scatter feta and parsley over the top and serve from the pan.
