How to cook it

  1. Combine the soy sauce, water, brown sugar, garlic, and ginger in a wide pot and bring to a simmer.

  2. Add the chicken thighs skin side down, cover, and simmer over medium-low heat, turning occasionally, until cooked through, about 25 minutes.

  3. Uncover and simmer until the sauce reduces to a sticky glaze that coats the chicken, another 10 minutes.

  4. Stir in the sesame oil off the heat.

  5. Slice the chicken, spoon the glaze over the top, scatter with sliced green onion, and serve over the rice.
