How to cook it

Heat the oven to 350F and butter a baking dish.

Cook the squash and onion in 2 tbsp of the butter in a large skillet over medium heat until tender, about 10 minutes, then drain off any excess liquid.

Whisk the eggs and sour cream together, then stir in the squash mixture and half the cheddar; season with salt and pepper.

Spread into the baking dish and scatter the remaining cheddar on top.

Melt the remaining butter, toss with the crushed crackers, and sprinkle over the casserole.

Bake until set and golden on top, about 35 minutes.
