How to cook it

  1. Warm the water and milk together with the sugar until the sugar dissolves, then keep it hot.

  2. Melt the ghee in a heavy pan and fry the cashews, almonds, and raisins until golden, then scoop them out.

  3. Add the semolina to the ghee and roast on low heat, stirring constantly, until it turns golden and smells nutty, about 8 minutes.

  4. Carefully pour in the hot sweetened milk mixture while stirring so no lumps form, then add the crushed cardamom.

  5. Cook until the halwa thickens and pulls away from the pan, then fold in the fried nuts and serve warm.

Suji Halwa (Semolina Pudding) takes about 30 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at breakfast. Nothing in the calendar rules it out, so it is a year round dish.
