How to cook it

  1. Rinse the basmati rice and soak it for 20 minutes, then drain.

  2. Heat the ghee in a pot and let the cumin seeds, bay leaf, cardamom, cloves, and cinnamon sizzle and release their aroma.

  3. Add the drained rice and toss gently for a minute to coat the grains in the ghee.

  4. Pour in the water with the salt and bring to a boil, then cover and cook on low until the water is absorbed, about 15 minutes.

  5. Rest for 5 minutes, fluff with a fork, garnish with cilantro, and serve.
