How to cook it

  1. Heat the oven to 425F.

  2. Toss the sliced red onions with 2 tbsp olive oil, half the sumac, and a pinch of salt, then spread them in a roasting pan.

  3. Rub the chicken thighs with the remaining olive oil, sumac, allspice, garlic, and salt.

  4. Set the chicken over the onions and roast until the skin is crisp and the chicken reaches 175F, about 40 minutes.

  5. Toast the pine nuts in a dry skillet until golden, about 3 minutes.

  6. Squeeze the lemon over the chicken and onions, then scatter with pine nuts and parsley to serve.
