How to cook it

  1. Grill or broil the eggplants whole over a flame or under the broiler, turning occasionally, until the skin is fully charred and the flesh is soft, about 10 minutes.

  2. Let the eggplants cool slightly, then peel away the charred skin, keeping the stem attached.

  3. Flatten each eggplant gently with a fork, keeping it in one piece.

  4. Beat the eggs with the minced garlic, salt, and black pepper.

  5. Heat the oil in a skillet over medium heat.

  6. Dip a flattened eggplant into the beaten egg, coating both sides well, then lay it in the hot pan.

  7. Cook until the egg is golden and set on the bottom, about 3 minutes, then flip carefully and cook the other side until set, about 2 minutes more.

  8. Repeat with the remaining eggplant and egg, and serve hot over the jasmine rice.
