How to cook it

  1. Melt the sugar with 2 tbsp water in a wide pan over medium heat and let it cook, swirling, into an amber caramel, about 5 minutes.

  2. Carefully add 1/2 cup water and the fish sauce, standing back as it bubbles, then stir until smooth.

  3. Add the oil, sliced shallots, garlic, and ginger and simmer 2 minutes.

  4. Nestle the salmon pieces into the sauce, spoon it over the top, and season with black pepper.

  5. Cover and simmer gently, basting once, until the salmon is just cooked and glazed, about 10 minutes.

  6. Scatter with scallions and serve over the jasmine rice.
