How to cook it

  1. Cut the eggplant into thick batons.

  2. Whisk the soy sauce, rice vinegar, sugar, cornstarch and water together to make the sauce.

  3. Heat the oil in a wok over medium-high heat and fry the eggplant, turning occasionally, until softened and lightly browned, about 6 minutes.

  4. Push the eggplant to the side, add the doubanjiang, garlic and ginger, and stir-fry 30 seconds until the oil turns red and fragrant.

  5. Pour in the sauce and toss everything together, cooking 2 minutes until it thickens and coats the eggplant.

  6. Scatter with scallions and serve; the name promises fish but the dish has none.
