How to cook it

Soak the dried wood ear in hot water 20 minutes until softened, then slice into thin shreds along with the bamboo shoots.

Cut the pork into thin shreds and toss with half the soy sauce and the cornstarch.

Whisk the remaining soy sauce with the rice vinegar and sugar to make the sauce.

Heat the oil in a wok over high heat and stir-fry the pork until just cooked, about 2 minutes, then push to the side.

Add the doubanjiang, garlic and ginger and stir-fry 30 seconds until fragrant and the oil turns red.

Add the wood ear and bamboo shoots and stir-fry 2 minutes, then pour in the sauce and toss everything together for 1 minute.

Scatter with scallions and serve; the flavor is sweet, sour and savory with very little actual heat.
