How to cook it

  1. Place the gammon in a large pot, cover with water, and bring to a boil, skimming any foam.

  2. Reduce to a simmer, cover, and cook until tender, about 1 hour 15 minutes.

  3. Meanwhile peel and cube the potato and boil in salted water until fork tender, about 15 minutes, then drain and mash with a splash of the milk.

  4. Shred the cabbage and add to the pot with the gammon along with the whole carrots for the last 20 minutes of cooking.

  5. Melt the butter in a small saucepan, whisk in the flour, cook for a minute, then whisk in the remaining milk and simmer to a smooth parsley-white sauce, about 5 minutes.

  6. Slice the gammon, drain the cabbage and carrots, and serve with the mashed potato and sauce spooned over.
