How to cook it
-
Place the gammon in a large pot, cover with water, and bring to a boil, skimming any foam.
-
Reduce to a simmer, cover, and cook until tender, about 1 hour 15 minutes.
-
Meanwhile peel and cube the potato and boil in salted water until fork tender, about 15 minutes, then drain and mash with a splash of the milk.
-
Shred the cabbage and add to the pot with the gammon along with the whole carrots for the last 20 minutes of cooking.
-
Melt the butter in a small saucepan, whisk in the flour, cook for a minute, then whisk in the remaining milk and simmer to a smooth parsley-white sauce, about 5 minutes.
-
Slice the gammon, drain the cabbage and carrots, and serve with the mashed potato and sauce spooned over.

When to cook it
Bacon and Cabbage takes about 100 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at dinner. It is at its best in winter, which is when what goes into it is worth buying.
