How to cook it

  1. Peel and finely grate the raw potato, then squeeze out as much liquid as possible in a clean towel.

  2. Mix the grated potato with the mashed potato, flour, baking soda, and salt.

  3. Stir in the buttermilk to make a thick, spoonable batter.

  4. Heat the oil in a large skillet over medium heat and spoon in the batter to form pancakes.

  5. Fry until golden and cooked through, about 4 minutes per side.

  6. Serve hot.
