Beef and Guinness Stew

How to cook it

Toss the beef with the flour, salt, and pepper.

Heat the oil in a large pot and brown the beef in batches, about 6 minutes, then set aside.

Cook the diced onion and carrot in the same pot until starting to soften, about 5 minutes.

Return the beef to the pot, stir in the tomato paste, then pour in the stout and beef stock and add the bay leaf and thyme.

Cover and simmer gently until the beef is almost tender, about 1 hour 30 minutes.

Add the chunked potato and continue simmering until the potato and beef are tender, about 30 minutes more.
