  1. Season the chicken thighs with salt and pepper.

  2. Heat the oil in a large pot and brown the chicken on both sides, about 6 minutes, then set aside.

  3. Add the sliced leek and carrot to the same pot and cook until starting to soften, about 6 minutes.

  4. Return the chicken to the pot with the chunked potato, thyme, and chicken stock, and bring to a simmer.

  5. Cover and cook gently until the chicken and potato are tender, about 35 minutes.

  6. Stir in the cream, season with salt and pepper, and simmer 5 minutes more before serving hot.
