Toast the peppercorns, cumin seeds, cinnamon and cloves in a dry pan for 2 minutes until fragrant, then cool and grind to a coarse powder.

Blend the coriander leaves, mint leaves, green chilies, ginger garlic paste, ground spices, vinegar, lemon juice and salt to a smooth, thick green paste, adding a splash of water only if the blender needs it to move.

Cut a few slashes into each piece of chicken so the marinade reaches the bone, then rub the green paste all over. Cover and refrigerate at least 2 hours, or overnight for the best flavour.

Heat the oil in a wide, heavy pan over medium heat and lay the chicken in without crowding, letting the excess marinade cling.

Cook 8 minutes a side, turning once, until the outside is dark green-brown in spots and a thermometer reads 165F at the thickest piece.

Rest 3 minutes and serve hot with lemon wedges and a simple onion salad.
