How to cook it

Dry roast the grated coconut in a pan over low heat, stirring constantly, until it turns a deep golden brown, about 6 minutes; take it slow, since scorched coconut turns the whole curry bitter.

In the same pan, roast the dried red chilies, coriander seeds, cumin seeds, poppy seeds, peppercorns, cloves, cinnamon and star anise for 2 minutes until fragrant.

Cool both and grind together to a smooth paste with a splash of water; this is the xacuti masala.

Heat the coconut oil in a heavy pot and fry the chopped onion until golden, about 8 minutes, then add the ginger garlic paste for a minute.

Add the chopped tomato and turmeric and cook 5 minutes until it softens, then stir in the ground xacuti masala and bhunno 8 minutes until the raw smell is gone and the oil rises to the top.

Add the chicken and sear 6 minutes, turning to coat every piece, then add the tamarind paste, salt and water.

Cover and simmer 20 minutes until the chicken is cooked through and the gravy has thickened to a coating consistency. Serve hot with rice or pav.
