How to cook it

  1. Peel and cube the potato and boil in salted water until fork tender, about 15 minutes, then drain and mash roughly.

  2. Shred the cabbage and cook in a large skillet with the butter until soft, about 8 minutes, then remove.

  3. Cook the diced onion in the same pan until soft, about 5 minutes.

  4. Stir the mashed potato and cooked cabbage into the pan with the onion and press into an even cake.

  5. Fry over medium heat, undisturbed, until a golden crust forms on the bottom, about 8 minutes, then flip in sections and crisp the other side, about 6 minutes.

  6. Season with salt and pepper and serve hot.

When to cook it

Bubble and Squeak takes about 25 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch. Nothing in the calendar rules it out, so it is a year round dish.
