Chicken Casserole

Chicken Casserole is British home cooking, eaten at dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

How to cook it
-
Cut the chicken thighs into large chunks, trimming off any visible fat. Heat the oil in a large casserole dish and brown the chicken in two batches over a high heat, then lift it out onto a plate.
-
Turn the heat down, add the onion, carrots, celery and leek and cook for 5 minutes until they start to soften. Add the sliced mushrooms and cook for 2 minutes more.
-
Stir in the flour, then pour in the stock a little at a time, stirring as it thickens. One stock cube in the 750 ml of water is plenty. Stir in the mustard, thyme and bay leaf and put the chicken back with its juices.
-
Cover and simmer gently for 30 minutes, until the chicken is tender. Stir in the peas for the last 5 minutes and season with black pepper.
-
Fish out the bay leaf and thyme stalks and serve with mash or boiled new potatoes alongside. The potatoes stay out of the pot, so everyone takes the amount they want.

When to cook it
Chicken Casserole takes about 60 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at dinner. Nothing in the calendar rules it out, so it is a year round dish.
