How to cook it

Mash the softened butter with the crushed garlic and chopped parsley, then shape into a log and chill until firm, about 30 minutes.

Slice each chicken breast horizontally to form a pocket and season inside and out with salt and pepper.

Push a piece of the garlic butter into each pocket and press the edges to seal.

Coat each piece in flour, dip in beaten egg, and press into the breadcrumbs.

Heat the oil in a large skillet over medium heat and fry the chicken until deeply golden and cooked through, about 5 minutes per side.
