How to cook it

Cook the diced onion, carrots, and potato in 2 tbsp oil until softened, then stir in the curry powder and 3 tbsp flour and cook 1 minute.

Whisk in the broth, soy sauce, and ketchup and simmer until thickened into a smooth sauce, about 12 minutes.

Pound the chicken to an even thickness and season with salt.

Dredge each piece in the remaining flour, then the beaten eggs, then the panko.

Fry in the remaining hot oil until golden and cooked through, about 4 minutes per side, then drain and slice.
