How to cook it

  1. Dice the Chinese sausage and carrot finely.

  2. Break up any clumps in the cold rice with your fingers.

  3. Heat half the oil in a wok over medium heat and fry the sausage until it renders some fat and browns lightly, about 3 minutes, then set aside.

  4. Add a little more oil and scramble the eggs briefly until just set, then push to one side.

  5. Add the remaining oil, the carrot, and the green peas and stir-fry 2 minutes.

  6. Add the rice and toss over high heat, breaking up any clumps, until hot and starting to crisp, about 5 minutes.

  7. Fold in the sausage and scrambled egg and season with the fish sauce.

  8. Scatter with scallions and serve hot.
