How to cook it

Heat the canned fava beans with their liquid in a small pot over medium heat for 5 minutes until warmed through, then mash roughly with a fork, leaving some beans whole.

Stir in the minced garlic, cumin and a pinch of salt and cook 2 minutes.

Off the heat, stir in most of the lemon juice and half the olive oil.

Spoon into a shallow bowl, top with the chopped tomato, parsley and chopped green chili, and finish with the remaining olive oil and a squeeze more lemon.
