How to cook it

  1. Pat the chicken dry and season with salt and black pepper. Heat the ghee in a heavy pot over medium-high heat and brown the chicken pieces on all sides, about 8 minutes, then lift them out.

  2. Add the sliced onion to the same pot and cook until soft and golden, about 6 minutes. Stir in the garlic and baharat and cook 1 minute until fragrant.

  3. Add the chopped tomato and tomato paste and cook 3 minutes until the tomato breaks down. Return the chicken to the pot with the pierced dried limes, cardamom pods, cinnamon stick and bay leaves, then pour in the water and bring to a boil.

  4. Cover and simmer 30 minutes until the chicken is cooked through and tender. Lift the chicken out, keep it warm, and skim any excess fat from the broth.

  5. Rinse the rice and stir it into the broth, topped up to 3.5 cups with water if needed. Bring back to a boil, cover, reduce the heat to low and cook 15 minutes until the rice is tender and the liquid is absorbed.

  6. Nestle the chicken back over the rice to warm through, scatter with the bloomed saffron, toasted almonds and raisins, and bring the whole pot to the table so everyone serves from one platter.
