How to cook it

  1. Heat the oil in a pot and cook the chopped onion until soft, about 5 minutes, then stir in the garlic, ginger and baharat and cook 1 minute.

  2. Add the chicken pieces and turmeric and cook 5 minutes, turning to coat, until the chicken is lightly seared.

  3. Stir in the chopped tomato and tomato paste and cook 3 minutes until it softens, then add the water, green chili and salt and bring to a boil.

  4. Cover and simmer 20 minutes, then add the potato and carrot and simmer 15 minutes more until the vegetables and chicken are both tender.

  5. Taste and adjust the salt, scatter with cilantro, and serve hot over plain rice, the weeknight stew most Gulf households cook more often than any platter.
