How to cook it

  1. Rinse the broken wheat and set aside. Heat the ghee in a heavy pot and cook the chopped onion until golden, about 6 minutes.

  2. Stir in the garlic, baharat and turmeric and cook 1 minute, then add the chicken pieces and sear 5 minutes, turning to coat in the spice.

  3. Add the chopped tomato and cook 3 minutes, then pour in the water and salt and bring to a boil.

  4. Cover and simmer 25 minutes until the chicken is tender, then lift the chicken out, shred the meat off the bone and set it aside, discarding the bones.

  5. Stir the broken wheat into the simmering broth, cover and cook 20 minutes, stirring occasionally, until the wheat is tender and the porridge has thickened.

  6. Fold the shredded chicken back in, taste and adjust the salt, scatter with cilantro, and serve warm, a simpler weeknight cousin of harees that keeps its grain rather than beating it smooth.
