How to cook it

Season the chicken with salt and pepper. Heat the oil in a heavy pot and brown the chicken on all sides, about 8 minutes, then lift it out.

Cook the sliced onion in the same pot until golden, about 6 minutes, then stir in the garlic, baharat, cardamom, cinnamon stick, cloves and bay leaves and cook 1 minute until fragrant.

Add the crushed tomatoes and tomato paste and cook 5 minutes until the sauce deepens in color. Return the chicken to the pot, pour in the water, and bring to a boil.

Cover and simmer 30 minutes until the chicken is tender. Lift the chicken out and keep it warm.

Rinse the rice and stir it into the tomato broth, topped up to 3.5 cups. Cover, reduce the heat and cook 15 minutes until the rice is tender and takes on the sauce's color.

Nestle the chicken back over the rice, scatter with bloomed saffron, toasted pine nuts and raisins, and serve the platter warm, the tomato-forward cousin of machboos.
