Bring a pot of water to a boil, break the vermicelli in half and cook 3 minutes until just tender, then drain well.

Melt the butter in a wide pan over medium heat, stir in the sugar, cardamom and saffron, then add the drained vermicelli and toss until every strand is coated and glossy.

Cook 4 minutes, stirring, until the vermicelli turns a deep golden color, then stir in the rose water and remove from the heat.

Whisk the eggs with a pinch of salt, heat the oil in a separate nonstick pan, and cook a thin omelette 2 minutes per side until just set, then slide it out and slice into ribbons.

Pile the sweet vermicelli onto plates, lay the omelette ribbons over the top, and serve warm, the sweet and savory breakfast most Gulf children grow up on.
