  1. Peel the chayote and cut it into thin matchsticks.

  2. Peel and devein the shrimp.

  3. Heat the oil in a wide pan and fry the garlic and onion until fragrant, about 2 minutes.

  4. Add the chopped tomato and cook until it breaks down, about 3 minutes.

  5. Add the shrimp and cook until just pink, about 2 minutes, then push aside.

  6. Add the chayote and water, cover, and cook until just tender but still slightly crisp, about 6 minutes.
