Ingredients

  • 1 cup rice flour
  • 3 cups water
  • 1/2 tsp carom seeds (ajwain)
  • 3/4 tsp salt
  • 2 tbsp sesame oil
  • 1/2 tsp red chili powder
  • 1 tbsp white sesame seeds

How to cook it

  1. Bring the water to a boil in a heavy pan with the carom seeds and salt.
  2. Lower the heat and add the rice flour all at once, stirring briskly and constantly with a wooden spoon so no lumps form.
  3. Keep stirring for 3 to 4 minutes until the mixture thickens into a soft, glossy mass that pulls away from the sides of the pan.
  4. Cover and cook on the lowest heat for 5 minutes, then turn off the heat and let it rest, covered, for 5 more minutes to finish steaming through.
  5. Spoon the khichu into bowls and drizzle with the sesame oil, red chili powder, and sesame seeds just before serving.
