Ingredients
- 1.5 cups rice flour
- 1 cup buttermilk
- 1 cup water
- 1/2 tsp cumin seeds
- 1/2 tsp salt
- 2 tbsp neutral oil
How to cook it
- Whisk the rice flour with the buttermilk, water, cumin seeds, and salt into a thin, smooth, pourable batter with no lumps.
- Let the batter rest for 10 minutes so the rice flour hydrates fully.
- Heat a nonstick griddle over medium heat and brush it lightly with oil.
- Pour a ladle of batter in the center and gently tilt the pan so it spreads into a thin round on its own.
- Cover and cook for 1 to 2 minutes until the top looks set and small holes appear, then loosen the edges and lift it off; ghavan is usually cooked on one side only, unlike a dosa.
- Repeat with the rest of the batter and serve warm with a little ghee, chutney, or a sprinkle of sugar.
