How to cook it

  1. Season the lamb with salt and pepper.

  2. Heat the oil in a large pot and brown the lamb in batches, about 6 minutes, then set aside.

  3. Cook the sliced onion in the same pot until starting to soften, about 5 minutes.

  4. Return the lamb to the pot with the bay leaf and beef stock and bring to a simmer.

  5. Cover and cook gently until the lamb is almost tender, about 1 hour.

  6. Add the chunked potato and carrot and continue simmering until the meat and vegetables are tender, about 40 minutes.

  7. Season with salt and pepper, scatter with chopped parsley, and serve hot.
