How to cook it

Pressure cook the beef with the ginger garlic paste, red chili powder, turmeric, coriander powder, crushed peppercorns, fennel seeds, salt and the water for 20 minutes, until the meat is tender but still holds together, not falling apart.

Heat the coconut oil in a wide, heavy pan, pop the mustard seeds, then add the dried red chilies and half the curry leaves and let them sizzle a few seconds.

Add the sliced onion and the coconut slices and fry 10 minutes, stirring often, until the onion turns deep golden and the coconut pieces crisp lightly at the edges.

Tip in the cooked beef along with any thick masala still clinging to it, and turn the heat up. Stir-fry 12 to 15 minutes, scraping the pan often, until any remaining liquid dries off and the beef is dark and coated in a nearly dry masala.

Finish with the remaining curry leaves and slit green chilies, and serve hot with rice or as a side with appam.
