  1. Heat the coconut oil in a wide pan and let the mustard seeds pop and the curry leaves crackle.

  2. Add the sliced onion, garlic, and ginger and cook until softened, about 6 minutes.

  3. Stir in the turmeric and chili powder, then add the chopped tomato and cook until saucy, about 5 minutes.

  4. Pour in the coconut milk and tamarind paste, season with salt, and simmer gently for 5 minutes.

  5. Slide in the fish pieces and simmer without stirring until just cooked through, about 8 minutes.

  6. Serve over the basmati rice.
