How to cook it

  1. Use batter that is a couple of days old and slightly sour, and a little thicker than you would pour for dosa. Using up that batter is exactly what paniyaram is for.

  2. Heat 1 tbsp of the oil in a small pan and add the mustard seeds. When they pop, add the urad dal, curry leaves, finely chopped onion, green chilies and ginger and cook 3 minutes until the onion softens.

  3. Stir this tempering into the batter with the grated carrot, cilantro and salt.

  4. Heat the paniyaram pan on medium heat, put a few drops of oil in each hollow and fill each one about three quarters full with batter.

  5. Cover and cook 2 to 3 minutes until the tops look set and the bottoms are golden, then turn each one over with a skewer or the handle of a spoon, add another drop of oil and cook 2 minutes more.

  6. Lift them out crisp outside and soft inside and eat them hot with coconut or tomato chutney. Repeat with the rest of the batter.

A South Indian dinner is a plate rather than a single dish. These are the courses that normally sit beside Kuzhi Paniyaram (Savoury Dumplings from Leftover Batter), read from the same composition Dinejot builds a real meal from.

A course labelled with another kitchen's name comes from a cuisine in the same family, which is where this plate usually borrows it from.
