How to cook it

  1. Pat the lamb cubes dry and brown them in the oil over medium-high heat in batches, then set them aside.

  2. Add the onions to the pot and cook until deeply golden, about 12 minutes, then stir in the garlic, ginger, cinnamon, and bay leaves.

  3. Add the Kashmiri chili, fennel, and half the garam masala and cook until fragrant, about 1 minute.

  4. Whisk in the yogurt a spoonful at a time so it does not split, then stir in the tomato puree.

  5. Return the lamb with its juices, add the salt and a cup of water, cover, and simmer gently until fork tender, about 1 hour.

  6. Stir in the remaining garam masala, adjust the salt, and serve over the basmati rice.
