Missi Roti (Spiced Gram Flour Flatbread) is North Indian home cooking, eaten at lunch and dinner. On the plate it is the carb everything else is eaten with. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

How to cook it
-
Mix the besan, atta, very finely chopped onion and green chili, cilantro, ajwain, crushed kasuri methi, turmeric, red chili powder and salt in a bowl. Rub in the oil, then knead with the water, a little at a time, into a firm dough and rest it 10 minutes.
-
Divide it into 8 balls and roll each into a round about 6 inches across, dusting with atta. Besan dough is short and cracks a little at the edges, which is normal.
-
Cook on a hot tawa about 1 minute a side until brown spots appear, then press it with a cloth or hold it over a low flame for a few seconds so it puffs in patches.
-
Brush each one with ghee as it comes off and keep them wrapped in a cloth. Missi roti goes with any dal or sabzi, or simply with a bowl of dahi and an onion.
