How to cook it

  1. Soak the dried wakame in cold water for 15 minutes until it softens and expands, then drain and chop into bite-size pieces.

  2. Simmer the dried anchovies in the measured water for 10 minutes, then strain and discard them.

  3. Heat the sesame oil in a pot and stir-fry the wakame for 2 minutes so it takes on a little nutty depth.

  4. Pour in the anchovy stock, add the soy sauce and minced garlic, and bring to a simmer.

  5. Cook 12 minutes until the seaweed is silky and tender, then serve hot.
