How to cook it

  1. Heat the oven to 400F, slice the eggplants into rounds, brush them with olive oil, and roast until soft and golden, about 25 minutes.

  2. Meanwhile cook the ground lamb with the onion and garlic in a skillet until browned, then stir in the crushed tomatoes, cinnamon, allspice, and salt and simmer 15 minutes.

  3. Melt the butter in a saucepan, whisk in the flour, and cook 1 minute, then gradually whisk in the milk and cook until thick, stirring in the parmesan.

  4. Layer half the eggplant in a baking dish, spread with the meat sauce, then top with the remaining eggplant.

  5. Pour the bechamel over the top and smooth it out.

  6. Bake until bubbling and golden, about 35 minutes, then rest 15 minutes before cutting.
