How to cook it

  1. Cook the salt pork in a large pot over medium heat until the fat renders and it turns golden, about 5 minutes, then remove and reserve.

  2. Add the butter, onion, and celery to the pot and cook until softened, about 5 minutes.

  3. Sprinkle in the flour and cook, stirring, 1 minute, then gradually whisk in 2 cups water until smooth.

  4. Add the potatoes and bay leaf, bring to a simmer, and cook until the potatoes are tender, about 15 minutes.

  5. Meanwhile, steam the clams in a covered pot with a splash of water until they open, about 5 minutes; discard any that stay shut, then remove the meat from the shells, chop, and strain and reserve the steaming liquid.

  6. Stir the chopped clams, their reserved liquid, the cream, and milk into the chowder and warm through gently without boiling, about 5 minutes.

  7. Season with salt and pepper, ladle into bowls, and top with the reserved salt pork.
